- Dissolve yeast in 2 cups lukewarm water in a large mixing bowl. Add salt and sugar, mixing well with a wooden spoon.
- Beat in enough flour, 1 cup at a time, to form a smooth ball that cleans the side of the bowl.
- Cover and set in a warm place free of drafts for 1 1/2 hours or until doubled in size.
- Stir down the dough, then turn out onto a lightly floured board.
- Knead a few turns, then cut the dough in half.
- Shape each half into a loaf and place in loaf pans.
- Sprinkle cornmeal over the loaves.
- Let rise for 5 minutes, then slice the tops in 4 places with a sharp knife.
- Brush the loaves with water and place in a cold oven with a pan of boiling water on the bottom rack.
- Bake at 350°F (175°C) until golden brown.
