Ingredients

  • 1 package dry yeast
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 5 cups flour
  • cornmeal

Instructions

  1. Dissolve yeast in 2 cups lukewarm water in a large mixing bowl. Add salt and sugar, mixing well with a wooden spoon.
  2. Beat in enough flour, 1 cup at a time, to form a smooth ball that cleans the side of the bowl.
  3. Cover and set in a warm place free of drafts for 1 1/2 hours or until doubled in size.
  4. Stir down the dough, then turn out onto a lightly floured board.
  5. Knead a few turns, then cut the dough in half.
  6. Shape each half into a loaf and place in loaf pans.
  7. Sprinkle cornmeal over the loaves.
  8. Let rise for 5 minutes, then slice the tops in 4 places with a sharp knife.
  9. Brush the loaves with water and place in a cold oven with a pan of boiling water on the bottom rack.
  10. Bake at 350°F (175°C) until golden brown.
