Cucumber Butter

Ingredients

  • 1 medium cucumber, peeled, seeded and sliced
  • 1/2 c. margarine
  • 2 Tbsp. lemon juice
  • 2 tsp. dill weed
  • 1/2 tsp. grated onion
  • 1/4 tsp. salt
  • 4 drops Tabasco sauce

Instructions

  1. Place cucumber in blender; blend until smooth.
  2. Whip margarine until light and fluffy in mixing bowl; gradually beat in cucumber. Blend in lemon juice, dill weed, onion, salt and Tabasco.
  3. Makes 1 1/4 cups.
  4. Great with fried yellow perch.
