- Peel cucumbers and slice them into rounds about the size of apple rings.
- Cut out the round center from each cucumber slice.
- Soak the cucumber slices in pickling lime with 8 1/2 quarts of water for 24 hours.
- Drain the cucumbers and wash them with fresh water.
- Soak the cucumbers in water for 3 hours.
- Pour off the water and cover the cucumbers with 1 cup white vinegar, alum, and red food coloring.
- Add enough water to cover the cucumbers.
- Cover and simmer the mixture for 3 hours.
