Ingredients

  • 2 gallons yellow cucumbers or overgrown cucumbers
  • 2 cups pickling lime
  • 8.5 quarts water
  • 1 cup white vinegar
  • 1 tablespoon alum
  • 1 bottle red food coloring
  • 2 cups white vinegar
  • 10 cups sugar
  • 1 large package red hots

Instructions

  1. Peel cucumbers and slice them into rounds about the size of apple rings.
  2. Cut out the round center from each cucumber slice.
  3. Soak the cucumber slices in pickling lime with 8 1/2 quarts of water for 24 hours.
  4. Drain the cucumbers and wash them with fresh water.
  5. Soak the cucumbers in water for 3 hours.
  6. Pour off the water and cover the cucumbers with 1 cup white vinegar, alum, and red food coloring.
  7. Add enough water to cover the cucumbers.
  8. Cover and simmer the mixture for 3 hours.
