Ingredients

  • 1 can beets, drained well
  • reserved beet liquid
  • water
  • 1 cup sugar
  • 1 (6 oz.) package raspberry Jell-O
  • 1 tablespoon unflavored gelatin

Instructions

  1. Mash the drained beets and reserve the liquid.
  2. Combine the reserved beet liquid with enough water to make 3 cups and bring to a boil.
  3. Add sugar to the boiling liquid and stir until dissolved.
  4. Add the raspberry Jell-O and unflavored gelatin; stir until completely dissolved.
  5. Allow the mixture to cool to room temperature.
  6. Pour the wine vinegar over the mashed beets.
  7. Fold the beets, grated onion, and mustard seed into the cooled Jell-O mixture.
  8. Pour into a mold or dish and refrigerate until set.
