Curried Spinach

Ingredients

  • 2 tablespoons olive oil
  • 1 Small onion diced
  • 2 tablespoons garlic chopped
  • 2 tomatoes diced
  • 2 tablespoons lemon juice
  • 1 teaspoon curry
  • 8 cups spinach coarsely chopped

Instructions

  1. Heat oil and add onion and garlic until softened
  2. Add lemon juice, and curry powder
  3. Add spinach and tomatoes and cook until wilted
  4. Add crumbled feta and heat through
