Curry Goat

Ingredients

  • 3 lb. goat meat, cut in 2-inch squares
  • 1 1/2 onions, divided
  • 3 Tbsp. curry powder
  • 1 Tbsp. dried thyme leaves
  • 2 tsp. pepper
  • 1 tsp. salt
  • 1/4 c. oil

Instructions

  1. Place meat in a glass baking dish.
  2. Season with 1 chopped onion, curry, thyme, pepper and salt.
  3. Cover.
  4. Refrigerate overnight.
  5. Remove meat from refrigerator the next day.
  6. Place meat in a large saucepan; cover with water.
  7. Add oil.
  8. Simmer 1 hour and 30 minutes.
  9. Add remaining half chopped onion.
  10. Simmer 15 minutes.
