Dad'S Apple Pie

Ingredients

  • pastry for double crust pie
  • 1 c. sugar
  • 1/3 c. flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/4 tsp. salt
  • 12 c. thinly sliced, peeled cooking apples
  • 3 Tbsp. butter or margarine
  • milk and sugar

Instructions

  1. Preheat oven to 375°.
  2. Prepare 2 crusts.
  3. Put one in a 12 x 7 1/2 x 2-inch baking dish.
  4. Cut slits in other crust; set aside. Combine sugar, flour, cinnamon, allspice and salt (for juicy pie, use 1/4 cup flour).
  5. Add sugar mixture to apples; toss to coat fruit.
  6. Turn into baking dish (apples will mound higher than sides).
  7. Dot with butter.
  8. Carefully place pastry atop apples; flute to the sides but not over the edge.
  9. Brush with milk; sprinkle with sugar.
  10. Cover edge of pie with foil.
  11. Bake in oven for 25 minutes.
  12. Remove foil.
  13. Bake for 20 to 25 minutes more.
