Ingredients

  • 8 medium sweet potatoes
  • 1 c. brown sugar
  • 2 Tbsp. honey
  • 1/2 c. orange juice
  • 1 tsp. orange rind, grated
  • butter

Instructions

  1. Peel and halve sweet potatoes lengthwise.
  2. Brown in butter in skillet.
  3. Arrange in casserole with butter; sprinkle brown sugar over yams.
  4. Pour honey, orange juice and rind over all.
  5. Bake, covered, at 450° for 45 minutes.
  6. Remove cover and bake 20 minutes more.
  7. Baste often.
