Date Filled Meringues

Ingredients

  • 1 c. dates, ground
  • 1/2 c. nuts, ground
  • 1/2 tsp. vanilla flavor
  • 2 egg whites
  • 2/3 c. sugar
  • 1/2 tsp. vanilla flavor

Instructions

  1. Dates and nuts can be ground together in food processor.
  2. In medium bowl, combine dates, nuts and vanilla flavoring, mix well. Shape 1/2 teaspoons of mixture into balls.
  3. Beat egg whites until soft peaks form.
  4. Gradually add sugar until stiff peaks form.
  5. Stir in flavor and food color.
  6. Drop balls one at a time into meringue. Coat well to form 1-inch balls.
  7. Remove with spoon and drop onto greased cookie sheet.
  8. Bake at 250° for 30 minutes.
  9. Immediately remove from pan and cool completely.
  10. Makes about 4 dozen.
