Ingredients

  • 1 white cake mix with pudding
  • 1 cup coconut
  • chopped walnuts
  • chopped pecans
  • 1 can Coco Lopez

Instructions

  1. Mix the white cake mix according to package directions, adding 1 cup of coconut to the batter.
  2. Cover the bottom of a 9 x 13-inch cake pan with chopped nuts. Pour the prepared cake batter over the nuts.
  3. Bake the cake according to the package instructions. Remove from oven and let it cool slightly.
  4. While the cake is still warm, poke deep holes all over the surface of the cake.
  5. Pour the can of Coco Lopez into the holes, then pour the can of Eagle Brand condensed milk into the holes as well.
  6. Use a knife to separate the edges of the cake from the pan and add some of the milk and Coco Lopez here as well.
  7. Cover the cake and refrigerate for 2 to 3 hours until completely cooled.
  8. Once chilled, spread Cool Whip evenly over the top of the cake.
  9. Serve chilled.

Tips & Substitutions

For a more tropical flavor, consider adding a splash of rum extract to the cake batter. If you don't have Coco Lopez, you can substitute with a mix of coconut cream and sweetened condensed milk. Chopped macadamia nuts would also work well instead of walnuts or pecans for a different texture and flavor. Make sure to poke holes deep enough for the liquids to soak in.

Serving Suggestions

Slice the chilled cake into squares and serve it with additional whipped topping or a sprinkle of toasted coconut for extra texture. It pairs beautifully with a tropical fruit salad or a scoop of vanilla ice cream. This cake is perfect for summer gatherings or as a sweet ending to a meal featuring American recipes.

Storage & Reheating

Store any leftover cake in an airtight container in the refrigerator for up to 4 days. The cake can become soggy if left out, so refrigeration is key. For best results, enjoy it cold straight from the fridge, as the flavors meld beautifully over time.

Frequently Asked Questions

Can I make this cake ahead of time?

Yes, this cake can be made a day in advance. Just prepare it as directed, refrigerate, and it will be even more flavorful the next day. Just be sure to keep it covered to maintain moisture.

Can I freeze the Pina Colada Cake?

Freezing is possible, but it's best to freeze it without the whipped topping. Wrap it tightly in plastic wrap and aluminum foil. When you're ready to serve, thaw it in the refrigerator and add the topping just before serving.

What can I use instead of Cool Whip?

If you prefer a homemade option, you can whip heavy cream with a bit of powdered sugar and vanilla extract until soft peaks form. This can be used in place of Cool Whip for a fresher taste and a more natural ingredient.
