Ingredients

  • 2 ready-made, deep dish pie shells
  • 4 (16 oz.) cans tart cherries in water
  • 2/3 cup sugar
  • 1/3 cup cornstarch
  • 1 tsp. ground cinnamon

Instructions

  1. Drain the cherries; reserve 1 1/2 cups of juice and set cherries aside.
  2. Combine cherry juice, 2/3 cup of sugar and cornstarch in a large saucepan.
  3. Stir and cook over medium heat until thick and bubbly.
  4. Gently stir in cherries, cinnamon, and almond extract.
  5. Place one pie crust in a pie pan and crease the edges.
  6. Pour the cherry mixture into the prepared crust.
  7. Bake at 400°F for 20 minutes.
  8. Place foil on edges of crust to prevent over-browning.
  9. Reduce oven temperature to 375°F.
  10. Add the top crust over the filling.
  11. Cut out heart shapes on the top crust.
  12. Bake for an additional 25 to 30 minutes until golden brown.
