Ingredients

  • 1 medium onion, chopped
  • 2 Tbsp bacon dripping or shortening
  • 1 small head cabbage, sliced
  • salt and pepper to taste
  • 1 bell pepper, sliced
  • 2 fresh tomatoes, sliced

Instructions

  1. Brown the chopped onion in bacon dripping or shortening, then remove from the pan.
  2. Place 1/3 of the sliced cabbage in the pan, followed by half of the sliced bell pepper, one sliced tomato, and half of the browned onion.
  3. Layer with another 1/3 of the cabbage, remaining bell pepper, tomato, and onions.
  4. Sprinkle the remaining cabbage on top, add salt and pepper to taste.
  5. Cover and simmer for about 20 minutes or until the vegetables are tender.
