Ingredients

  • 1/2 doz. hard-boiled eggs
  • 1 (8 oz.) can stewed tomatoes (Mexican-style)
  • 1 c. cooked ham, chopped
  • 1/2 can sweet peas
  • 1 Tbsp. olive oil

Instructions

  1. Bring to a boil the stewed tomatoes. Carefully cut hard-boiled eggs in half lengthwise.
  2. Distribute in tomato sauce.
  3. Sprinkle on top of eggs the ham, onions, olive oil and sweet peas.
  4. Cook on low heat for 20 minutes.
