Ingredients

  • water
  • 1 c. salt
  • 1 gal. cucumbers
  • 2 Tbsp. alum
  • 2 Tbsp. pickling spices
  • 3 c. sugar

Instructions

  1. Dissolve 1 cup of salt in 11 cups of water.
  2. Pour the brine over the cucumbers, ensuring they are submerged.
  3. Let stand in a cool place for 2 weeks, keeping covered and skimming off any foam.
  4. After 2 weeks, wash off the brine from the cucumbers.
  5. Slice the cucumbers lengthwise and cover with water and 2 Tbsp alum.
  6. Let stand for 3 hours, then drain the cucumbers.
  7. Pour vinegar over the cucumbers to cover them.
  8. Add 2 Tbsp pickling spices to the jar or jug.
  9. Let stand for 24 hours.
  10. Drain the cucumbers and discard the solution.
  11. Add 3 cups sugar to the jar each morning for 3 consecutive mornings, stirring gently to dissolve the sugar and make the syrup.
  12. Put the pickles in gallon jugs or jars. Do not need to seal.
