A refreshing diabetic-friendly grape spread with natural grape flavor and a hint of lemon, perfect for spreading on bread or toast for a sweet, low-sugar treat.

Ingredients

  • 1 tsp lemon juice
  • 1/2 cup cold water
  • 1 1/2 cups pure concord grape juice
  • 2 tsp gelatin
  • artificial sweetener equivalent to 1/4 cup sugar

Instructions

  1. Soak gelatin in cold water.
  2. Heat grape and lemon juice until boiling, then simmer gently for 10 minutes.
  3. Remove from heat and add gelatin and artificial sweetener, stirring to dissolve.
  4. Pour the mixture carefully into 2 hot, clean 1/2 pint jars.
  5. Cover lightly until cooled, then tighten lids and store in refrigerator.
