- Drain pineapple slices, reserving juice.
- Arrange four pineapple slices in a lightly greased and wax paper lined 8-inch round pan.
- Fill the center of each pineapple slice with chopped pecans.
- Sprinkle remaining pecans in the center of the cake pan.
- Mix 1/3 cup pineapple juice with one-third cup water and blend in a mixer for 3 minutes.
- Add the mixture to the batter and mix for 1 minute.
- Pour batter over the pineapple slices and pecans.
- Bake at 375°F (190°C) for 25 to 35 minutes until cooked.
- Cool slightly and loosen the cake around the sides.
- Invert onto a serving plate and remove wax paper.
