  1. Drain pineapple slices, reserving juice.
  2. Arrange four pineapple slices in a lightly greased and wax paper lined 8-inch round pan.
  3. Fill the center of each pineapple slice with chopped pecans.
  4. Sprinkle remaining pecans in the center of the cake pan.
  5. Mix 1/3 cup pineapple juice with one-third cup water and blend in a mixer for 3 minutes.
  6. Add the mixture to the batter and mix for 1 minute.
  7. Pour batter over the pineapple slices and pecans.
  8. Bake at 375°F (190°C) for 25 to 35 minutes until cooked.
  9. Cool slightly and loosen the cake around the sides.
  10. Invert onto a serving plate and remove wax paper.
