Diced Apple Dessert Cake

Ingredients

  • 3 c. diced apples
  • 1 1/2 c. sugar
  • 2 c. sifted flour
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 eggs, well beaten
  • 3/4 c. vegetable oil
  • 2 tsp. vanilla
  • 1 c. nutmeats (optional)

Instructions

  1. Mix apples and sugar in a bowl and set aside.
  2. Sift dry ingredients and mix with apples.
  3. Add eggs, oil, vanilla and nuts if desired.
  4. Pour batter into well-greased 9 x 13-inch pan.
  5. Bake at 325° for 50 minutes or until cake tests done.
