Ingredients

  • 10 lb. medium size cucumbers
  • 1 c. salt
  • 1/4 c. mixed pickle spices
  • 2 1/4 qt. vinegar
  • 2 Tbsp. sugar substitute

Instructions

  1. Wash and cut cucumbers into slices about 1/4-inch thick.
  2. Mix cucumbers and salt together.
  3. Let stand overnight.
  4. In the morning, drain and press out all the juice possible.
  5. Rinse cucumbers once in cold water.
  6. Combine vinegar, sugar substitute, and spices in a saucepan and boil for 1 minute.
  7. Add cucumbers to the boiling mixture and simmer for 5 minutes.
  8. Pack cucumbers into clean, hot sterile jars to within 1-inch of the top.
  9. Fill jars with hot liquid to the top.
  10. Seal jars tightly.
