Ingredients

  • 2 Tbsp. low-fat oil
  • 1 small head cabbage, chopped
  • 1 large onion
  • 2 bell peppers, sliced
  • 1 c. sliced okra
  • 1 (28 oz.) can chopped tomatoes
  • dash of salt
  • 1 1/2 to 2 qt. water

Instructions

  1. In a large pot, sauté onion and bell peppers in oil for one to two minutes.
  2. Add chopped tomatoes, sliced okra, and chopped cabbage to the pot.
  3. Stir well to combine all ingredients.
  4. Add water to the pot and bring to a boil over high heat.
  5. Reduce heat to medium, cover the pot, and simmer for 30 to 45 minutes.
  6. Add salt to taste and stir occasionally before serving.
