Double Berry Cheesecake

- 1) Preheat oven to 350 degrees.
- 2) In a large bowl, beat cream cheese and sugar until smooth. Add in eggs, 1 at a time, mix well. Scrape sides of bowl often. Add vanilla.
- 3) This next step is totally up to you: you could mix the jam and the crushed berries in with all the cream cheese mix or you could pour 1/2 of the plain mix in the crust and mix the other 1/2 with jam and crushed berries. Pour into crust.
- 4) Bake for 25-35 minutes or until set. Cool and refrigerate for at least 4 hrs before serving. Serve with more jam or more fresh berries.
