Ingredients

  • 2 egg whites
  • 1 1/2 cups sugar
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon light corn syrup (optional substitute for cream of tartar)
  • 1/3 cup water

Instructions

  1. Combine egg whites, sugar, cream of tartar, and water in the top of a double boiler.
  2. Beat at high speed for 1 minute.
  3. Place over boiling water and beat on high speed for 7 minutes.
  4. Remove the pan from boiling water and add vanilla.
  5. Beat for 2 minutes longer on high speed.
