Double Crust Coconut Pie

Instructions
- Thaw coconut.
- Line a 9-inch pie plate with pastry.
- Preheat oven to 400°.
- Combine sugar, coconut, salt and cream.
- Beat egg whites until stiff peaks form.
- Gently fold into coconut mixture. Spoon into prepared pie plate and cover with top crust.
- Brush lightly with milk or cream.
- Bake for 30 minutes.
