Ingredients

  • 2 c. flour
  • 1 tsp. salt
  • 2/3 c. Crisco or lard
  • 6 or 7 Tbsp. cold water

Instructions

  1. In a medium bowl, stir together flour and salt.
  2. Cut in shortening until pieces are the size of small peas.
  3. Sprinkle 1 tablespoon water over part of the mixture; gently toss.
  4. Repeat until all is moistened. Form into 2 balls.
  5. On a lightly floured surface, flatten 1 ball of dough with hands.
  6. Roll with a floured pin from the center to the edges.
  7. Ease pastry into a pie plate, being careful not to tear.
  8. Trim pastry even with the rim of the pie plate.
  9. Repeat with the remaining dough ball for the top crust or use for a single crust pie.
  10. Use fingers to pinch and shape pie edges.
  11. Optionally, add about 1 tablespoon of sugar to the dough for a sweeter flavor.
