Dried Apricot Cake

Ingredients

  • 1 c dried apricots
  • 2 c water
  • 6 T sugar
  • 1/2 c shortening
  • 1 c sugar
  • 2 egg yolks
  • 1 tsp vanilla
  • 1 3/4 c sifted cake flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder

Instructions

  1. Simmer first 3 ingredients together 30 minutes.
  2. Mash and measure 1/2 cup pulp.
  3. Cream shortening and sugar thoroughly, add yolks and vanilla;
  4. beat.
  5. Sift dry ingredients together and add alternately with water and pulp.
  6. Bake in a cake pan (8x8 inches), lined with waxed paper, at 350° for 45 minutes.
