Ingredients

  • 4 large ham hocks
  • 16 oz dried beans (pinto or other variety)

Instructions

  1. Wash ham hocks and place in a small pressure pot.
  2. Cover ham hocks with water and cook for 45 minutes.
  3. Allow the pressure pot to cool naturally before opening.
  4. Wash dried beans and transfer to the cooking pot.
  5. Add about 1 1/2 quarts of water to the beans.
  6. Bring the water to a boil and boil for a few minutes.
  7. Cover the pot and let the beans stand for approximately 2 hours.
  8. Drain the soaking water from the beans.
  9. Add the water from cooking the ham hocks to the beans.
  10. Cut up the cooked ham hocks and add to the beans.
  11. Cook the mixture over a slow to moderate burner for 1 to 2 hours until done.
