Ingredients

  • 1 large or 2 small ducks, cut into small pieces
  • 1 large onion, diced
  • 1 teaspoon salt
  • 8 cups water
  • 2 stalks celery with leaves, chopped

Instructions

  1. Place all ingredients in a large pot.
  2. Simmer gently for 2 to 3 hours. If the soup becomes too thick, add 1 cup of water.
  3. Add 2 to 3 ounces of thin noodles and cook very slowly for an additional 30 minutes before serving.
