  6. In a bowl, mix Dijon mustard, honey, minced garlic, and remaining pineapple juice.
  7. Add mixture to the skillet and bring to a boil.
  8. Reduce heat, cover, and simmer for 15 to 20 minutes or until chicken juices run clear.
  9. Remove chicken and keep warm.
  10. Stir cornstarch mixture and add to the skillet; bring to a boil.
  11. Boil and stir for 2 minutes.
  12. Return chicken to the skillet.
  13. Top with pineapple pieces and heat through.
