Ingredients

  • 1 (5 lb.) duckling
  • 1 1/2 tsp. salt
  • 2 tsp. fat
  • 1 1/4 c. orange juice
  • 1/2 tsp. hot sauce
  • 1/2 tsp. allspice
  • 2 oranges, sliced 1/4-inch thick

Instructions

  1. Split duck down
  2. back. Sprinkle
  3. with 1 teaspoon salt. Heat fat in
  4. large
  5. skillet,
  6. add duck. Cook until browned at 300°. Mix orange juice, hot
  7. sauce,
  8. allspice and remaining salt, pour over
  9. duck.
  10. Cook
  11. covered over
  12. low heat, turning duck several times
  13. for about 45 minutes.
  14. Add oranges.
  15. Cook 15 minutes longer or until duck is tender.
