Instructions
- Cook sugar, corn syrup, water and salt to 248°.
- Cover and boil for 3 minutes.
- Uncover and place thermometer in pan.
- Beat egg whites until stiff but not dry.
- When syrup is 248°, slowly pour about 1/2 of the syrup over the egg whites, beating constantly with the mixer.
- Cook remaining syrup to 272°.
