Ingredients

  • 1 1/2 cups evaporated milk
  • 3/4 cup water
  • 2 packages dry yeast
  • 2/3 cup firmly packed brown sugar
  • 1/2 cup quick cooking oats
  • 2 teaspoons salt
  • 1 cup whole wheat flour
  • 1 cup rye flour
  • 3 to 3 1/2 cups all-purpose flour

Instructions

  1. Combine evaporated milk and water in a large bowl.
  2. Heat mixture to 105° to 115° Fahrenheit.
  3. Dissolve dry yeast in the warm mixture.
  4. Add brown sugar, oats, salt, whole wheat flour, rye flour, and 1 cup of all-purpose flour and sunflower seeds. Stir vigorously for 1 minute.
  5. Stir in 1 1/2 cups of additional flour to make a stiff dough.
  6. Knead on a floured surface, adding remaining flour until the dough is smooth and elastic, about 8 minutes.
  7. Place dough in a buttered bowl, brush the top with butter, cover, and let rise in a warm place until doubled in bulk.
  8. Punch down the dough.
  9. Divide into 2 loaves, place in greased loaf pans.
  10. Brush the tops with milk and let rise until doubled in bulk.
  11. Bake in a slow oven at 325°F (160°C) for 25 to 30 minutes or until the loaves sound hollow when tapped.
