Ingredients

  • 1 package dried 15 bean soup
  • 2 cans Ro-Tel (diced tomatoes and green chiles)
  • Juice of 1/2 lemon
  • 1 tablespoon chili powder

Instructions

  1. Soak the dried 15 bean soup in water overnight.
  2. Next morning, empty the can of Ro-Tel into the crock-pot along with the rinsed beans.
  3. Add enough water to cover the beans, include the flavor packet from the bean package, and squeeze in the lemon juice.
  4. Cook on high for 6 hours, then turn to low and cook for an additional 4 hours.
  5. Add chili powder during the last hour of cooking.
  6. Serve the soup with Mexican cornbread and salad.
