Easy Chocolate Muffins

Ingredients

  • 1 box Chocolate Cake Mix
  • 1 can pure pumpkin (not pie mix)
  • 2 tbsp Flax meal, optional

Instructions

  1. Heat oven to 375.
  2. In a medium bowl, mix chocolate cake mix and pumpkin.
  3. (and flax if using) Stir well to combine, mixture will be very thick.
  4. Spoon batter into 12 regular muffin or 24 mini muffin tins sprayed with cooking spray.
  5. Cook about 10 minutes for mini, 20 minutes for regular size, or until toothpick comes out clean.
  6. let cool in pan for 2 minutes, then remove to wire rack to finish cooling.
  7. Enjoy!
