- Beat eggs well with a fork or whisk.
- Add sugar, vanilla, and salt to the eggs and beat well.
- Add rice to the milk and bring to a boil, stirring constantly.
- Very slowly pour the milk and rice mixture into the egg mixture while stirring.
- Pour the mixture into a large mixing bowl.
- Set the bowl into a pan of hot water, 2 inches deep.
- Bake in a 350°F oven for 40 minutes, stirring well every 10 minutes for three times.
- Serve hot or cold.
