Easy Delicious Rice Pudding

Ingredients

  • 2 qt. milk
  • 5 eggs
  • 1 tsp. vanilla
  • 1 2/3 c. Minute rice
  • 1 c. sugar
  • 1/2 tsp. salt

Instructions

  1. Beat eggs well with a fork or whisk.
  2. Add sugar, vanilla, and salt to the eggs and beat well.
  3. Add rice to the milk and bring to a boil, stirring constantly.
  4. Very slowly pour the milk and rice mixture into the egg mixture while stirring.
  5. Pour the mixture into a large mixing bowl.
  6. Set the bowl into a pan of hot water, 2 inches deep.
  7. Bake in a 350°F oven for 40 minutes, stirring well every 10 minutes for three times.
  8. Serve hot or cold.
