Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 3 teaspoons vanilla
  • 2 cups blended spaghetti squash
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 1 teaspoon nutmeg

Instructions

  1. Beat eggs until frothy and slowly add sugar.
  2. Continue beating on medium speed while adding oil.
  3. Mix in vanilla extract and blended spaghetti squash.
  4. Combine dry ingredients: flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
  5. Add the dry mixture to the squash mixture and mix well.
  6. Optionally, fold in nuts or raisins if desired.
  7. Grease and flour two bread pans.
  8. Pour the batter into the prepared pans.
  9. Bake at 350°F (175°C) for 45 to 60 minutes until a toothpick inserted in the center comes out clean.
