Easy lemon bars with a light, tangy lemon flavor and a soft, cake-like texture, perfect for quick desserts or casual gatherings with a sweet citrus touch.

- Preheat oven to 350°F (175°C). Grease and flour a 10 x 15-inch (jelly roll) pan.
- In a bowl, stir together the dry angel food cake mix and lemon pudding or pie filling until well combined.
- If desired, stir in chopped nuts or coconut, and lemon extract.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25 minutes or until the top is set and lightly golden.
- Remove from oven and cool completely at room temperature.
- Optional: dust with powdered sugar or top with powdered sugar glaze or cream cheese frosting.
- Cut into bars and serve.
