Easy lemon bars with a light, tangy lemon flavor and a soft, cake-like texture, perfect for quick desserts or casual gatherings with a sweet citrus touch.

Ingredients

  • 1 pkg. angel food cake mix
  • 21 oz. can lemon pudding or pie filling
  • 3/4 cup coconut or 1/2 cup chopped nutmeats (optional)
  • 1 teaspoon lemon extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 10 x 15-inch (jelly roll) pan.
  2. In a bowl, stir together the dry angel food cake mix and lemon pudding or pie filling until well combined.
  3. If desired, stir in chopped nuts or coconut, and lemon extract.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25 minutes or until the top is set and lightly golden.
  6. Remove from oven and cool completely at room temperature.
  7. Optional: dust with powdered sugar or top with powdered sugar glaze or cream cheese frosting.
  8. Cut into bars and serve.
