Ingredients

  • shredded lettuce
  • nonfat sour cream
  • mild chunky salsa

Instructions

  1. Cook shredded lettuce, nonfat sour cream, and mild chunky salsa in a saucepan over medium heat for 10 minutes or until heated.
  2. In a separate saucepan, stir together chicken and mushroom soups and enchilada sauce; cook, stirring often, for 10 minutes.
  3. Spoon 1/3 of the sauce into a 13 x 9-inch baking dish coated with cooking spray.
  4. Top with 3 tortillas.
  5. Spoon half of the chicken mixture and 1/3 of the sauce over the tortillas.
  6. Sprinkle with half of the Cheddar cheese.
  7. Repeat the layers: top with 3 tortillas, remaining chicken mixture, 1/3 of the sauce, and half of the Cheddar cheese.
  8. Add a final layer of 3 tortillas, the remaining sauce, and sprinkle with Monterey Jack cheese.
  9. Bake at 350°F for 30 to 40 minutes until bubbly.
  10. Serve topped with shredded lettuce, sour cream, and salsa.
