Instructions
- Cook shredded lettuce, nonfat sour cream, and mild chunky salsa in a saucepan over medium heat for 10 minutes or until heated.
- In a separate saucepan, stir together chicken and mushroom soups and enchilada sauce; cook, stirring often, for 10 minutes.
- Spoon 1/3 of the sauce into a 13 x 9-inch baking dish coated with cooking spray.
- Top with 3 tortillas.
- Spoon half of the chicken mixture and 1/3 of the sauce over the tortillas.
- Sprinkle with half of the Cheddar cheese.
- Repeat the layers: top with 3 tortillas, remaining chicken mixture, 1/3 of the sauce, and half of the Cheddar cheese.
- Add a final layer of 3 tortillas, the remaining sauce, and sprinkle with Monterey Jack cheese.
- Bake at 350°F for 30 to 40 minutes until bubbly.
- Serve topped with shredded lettuce, sour cream, and salsa.
