Easy Spinach Con Queso

Creamy and flavorful spinach con queso with melted cheese, pimientos, and onions, perfect for sharing with tortilla chips at gatherings or as a snack.

Ingredients

  • 10 oz. frozen chopped spinach
  • 1 lb. process cheese with mild jalapeno peppers
  • 1/2 cup milk
  • 1 small onion
  • 2 oz. jar diced pimiento

Instructions

  1. Place spinach between paper towels and squeeze until barely moist.
  2. Set spinach aside.
  3. Combine cheese, milk, onion, and pimiento in the top of a double boiler; bring water to a boil.
  4. Reduce heat to low; cook until cheese melts.
  5. Add spinach and diced tomato, stirring well.
  6. Serve warm with tortilla chips.
