Ingredients

  • 1 cup green chiles, chopped
  • 1 medium onion, chopped
  • 1 cup tomatoes, chopped
  • 1 tablespoon fat
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1 cup grated Longhorn cheese
  • 6 corn tortillas

Instructions

  1. Chop the green chiles and set aside.
  2. In a frying pan, heat the fat and sauté the chopped onion until translucent.
  3. Add the chopped tomatoes and chiles to the pan and simmer for 5 minutes.
  4. Fry the corn tortillas until softened.
  5. Roll a small amount (2 teaspoons) of grated cheese in each tortilla.
  6. Place the rolled tortillas in a 6 x 8-inch baking pan.
  7. Pour the chili sauce over the tortillas.
  8. Sprinkle the grated cheese over the top.
  9. Bake at 350°F for 15 to 20 minutes or until the cheese is melted and bubbly.
