Ingredients

  • 1 (1.4 oz.) pkg. dry vegetable soup mix
  • 1 (10 oz.) box frozen mixed vegetables
  • 1 (14.5 oz.) can fire-roasted diced tomatoes with green chiles
  • 2 Tbsp. minced cilantro
  • 1 c. crushed tortilla chips
  • 2 scallions
  • 2 Tbsp. sour cream

Instructions

  1. In a saucepot, bring 3 cups of water, the dry vegetable soup mix, and mixed vegetables to a boil.
  2. Reduce heat and simmer, partially covered, for 8 minutes.
  3. Add the diced tomatoes with green chiles and cook for 2 minutes.
  4. Stir in minced cilantro.
  5. Serve garnished with crushed tortilla chips, sliced scallions, and a dollop of sour cream.
