Ingredients

  • 2 c. muscat raisins
  • 1 c. sugar
  • 2 c. water
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 3 Tbsp. lemon juice
  • 1 tsp. lemon extract
  • 2 Tbsp. cornstarch

Instructions

  1. Cook raisins, sugar, water, salt, butter, and lemon juice for five minutes.
  2. Dissolve cornstarch in 3 tablespoons cold water and add to the raisin mixture.
  3. Cook for an additional five minutes until thickened.
  4. Remove from heat and stir in lemon extract.
  5. Pour the filling into a pastry-lined pie pan.
  6. Arrange the top pastry in a lattice pattern and bake for 25 minutes in a preheated 425°F oven.
