Ingredients

  • 4 eggs
  • 3/4 lb chopped chicken, pork or turkey
  • 8 oz can button mushrooms
  • 1/2 can drained bean sprouts
  • 1 green onion chopped
  • 1/2 stalk celery chopped
  • salt

Instructions

  1. Beat the eggs slightly in a mixing bowl.
  2. Add the chopped chicken, pork, or turkey, drained mushrooms, bean sprouts, chopped green onion, chopped celery, salt, and pepper to the eggs and mix well.
  3. Cover the bottom of a 6-inch skillet with peanut oil and heat the skillet over low heat.
  4. Pour one-fourth of the egg mixture into the skillet and cook until brown on one side.
  5. Carefully turn the Egg Foo Yong and cook until browned on the other side.
  6. Repeat with the remaining mixture.
  7. Serve hot with Brown Sauce.
