Tips & Substitutions

Ensure your egg whites are at room temperature for optimal volume. If you're out of vanilla, almond extract can be a great substitute. For those looking to add a twist, consider folding in mini chocolate chips or crushed nuts before baking. Keep in mind that humidity can affect the meringue; a dry day is best for making Egg Kisses.

Serving Suggestions

Egg Kisses are delightful on their own but also make a charming addition to dessert platters. They pair beautifully with fresh berries or can be served alongside whipped cream for a light treat. For a unique twist, try them with a scoop of vanilla ice cream or alongside slices of Fariinisokeri Kakku (Finnish Brown Sugar Cake).

Storage & Reheating

Store leftover Egg Kisses in an airtight container at room temperature for up to a week. Avoid refrigerating them, as moisture can cause them to become chewy. If you want to enjoy them later, consider freezing them in a single layer on a baking sheet, then transferring to a container once frozen.

Frequently Asked Questions

Why won't my egg whites whip up to stiff peaks?

Ensure there is no yolk in the egg whites, as even a tiny amount of fat can prevent them from whipping properly. Additionally, your mixing bowl should be clean and dry. If you notice they still aren't stiff, try adding a pinch of cream of tartar to help stabilize the foam.

Can I make Egg Kisses ahead of time?

Absolutely! Egg Kisses can be made a day or two in advance. Just ensure they are stored properly in an airtight container to maintain their crisp texture. This makes them a perfect treat for events as they can be prepared ahead of time.

Can I use powdered sugar instead of granulated sugar?

Yes, you can use powdered sugar instead of granulated sugar. It may incorporate more smoothly into the meringue, yielding a softer texture. However, be aware that this might affect the overall sturdiness of your Egg Kisses, so monitor their consistency while whipping.
