Ingredients

  • 12 cup margarine (or butter)
  • 1 cup sugar
  • 1 cup whole wheat flour
  • 1 cup unbleached flour
  • 1 teaspoon baking powder
  • 1 (8 ounce) can pumpkin
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon
  • 5 tablespoons soymilk

Instructions

  1. Preheat oven to 350F.
  2. Mix melted margarine and sugar together in a small bowl.
  3. In large bowl, mix all dry ingredients.
  4. Add pumpkin puree & sugar mixture to dry ingredients and mix well.
  5. Pour into greased loaf pan and put in the oven for about 1 hour.
  6. Check with toothpick or chopstick that the center is dry before removing.
  7. Let cool for at least 30 minutes and serve.
