Ingredients

  • 2 large or 3 small avocados
  • 6 medium tomatoes
  • 1/2 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1 tsp. salt
  • dash lemon juice
  • jalapenos, chopped fine, to taste

Instructions

  1. Wash tomatoes, scoop out the middle, and save the pulp.
  2. Peel avocados and remove seeds.
  3. Mash avocados in a bowl.
  4. Add 1/2 cup of tomato pulp, chopped jalapenos, onion powder, garlic powder, salt, and lemon juice to the mashed avocados.
  5. Stuff the mixture into the tomato shells.
  6. Place the stuffed tomatoes on lettuce caps.
  7. Garnish with a dab of salad dressing.
  8. Sprinkle chili powder over all.
