- Wash tomatoes, scoop out the middle, and save the pulp.
- Peel avocados and remove seeds.
- Mash avocados in a bowl.
- Add 1/2 cup of tomato pulp, chopped jalapenos, onion powder, garlic powder, salt, and lemon juice to the mashed avocados.
- Stuff the mixture into the tomato shells.
- Place the stuffed tomatoes on lettuce caps.
