Eva's Chopped Liver Appetizer offers a rich, savory spread with tender liver, onions, and mayonnaise, perfect for spreading on crackers or rye bread, ideal for gatherings.

Ingredients

  • 2 lb. deveined beef or calves liver, sliced
  • 1/2 cup mayonnaise
  • 6 eggs, hard-boiled
  • 3 large white onions, sliced

Instructions

  1. In separate pans, sauté liver and onions in a small amount of olive oil.
  2. Set aside to cool.
  3. Feed all ingredients through a food grinder two times.
  4. Add salt and pepper to taste and mix with mayonnaise.
  5. Add more mayonnaise, if needed, to reach a spreadable consistency.
  6. Serve spread on crackers or rye bread.
  7. May serve on a bed of lettuce as an appetizer or use as a sandwich filling with your favorite bread.
