- Simmer tomato sauce in a small saucepan over medium heat for 6-8 mins, until thickened. Distribute between vol-au-vents.
- Meanwhile, press an olive half, rounded side up, into mozzarella to create eyeballs. Place 1 eyeball in each tart shell. Serve.
