Ingredients

  • 2/3 c. cocoa
  • 3 c. sugar
  • 1/8 tsp. salt
  • 1 1/2 c. milk
  • 1/4 c. butter
  • 1 tsp. vanilla

Instructions

  1. Combine cocoa, sugar, and salt in a heavy 4-quart saucepan.
  2. Stir in milk until smooth.
  3. Bring to a bubbly boil over medium heat, stirring constantly.
  4. Continue boiling without stirring until the mixture reaches 234°F (soft ball stage).
  5. Ensure the candy thermometer bulb does not touch the bottom of the saucepan.
  6. Remove the pan from heat.
  7. Add butter and vanilla, and do not stir.
  8. Allow the mixture to cool at room temperature to 110°F.
  9. Beat the mixture until it thickens and loses some gloss.
  10. Quickly spread the fudge into a lightly buttered 8- or 9-inch square pan.
  11. Cool completely.
  12. Cut into squares.
