- Combine cocoa, sugar, and salt in a heavy 4-quart saucepan.
- Stir in milk until smooth.
- Bring to a bubbly boil over medium heat, stirring constantly.
- Continue boiling without stirring until the mixture reaches 234°F (soft ball stage).
- Ensure the candy thermometer bulb does not touch the bottom of the saucepan.
- Remove the pan from heat.
- Add butter and vanilla, and do not stir.
- Allow the mixture to cool at room temperature to 110°F.
- Beat the mixture until it thickens and loses some gloss.
- Quickly spread the fudge into a lightly buttered 8- or 9-inch square pan.
- Cool completely.
- Cut into squares.
