Ingredients

  • 1/2 lb. farfelle (bow tie pasta)
  • 4 tsp. olive oil
  • 3 medium carrots, julienned
  • 9 scallions, cut diagonally into 1 1/2-inch pieces
  • 40 fresh sage leaves, stems removed
  • salt to taste
  • juice of 1/2 lemon
  • 3 Tbsp. freshly grated cheese (such as Jack or soy Mozzarella; optional)

Instructions

  1. Cook pasta in boiling water according to package directions.
