Ingredients

  • 1/4 c. chopped onion
  • 4 to 5 Tbsp. butter
  • 2 c. cooked rice
  • 2 Tbsp. lemon juice
  • 1 slightly beaten egg
  • salt and pepper
  • 1 lb. frozen fish fillets, partially thawed

Instructions

  1. Cook onion in 2 tablespoons butter until slightly tender; stir into rice.
  2. Mix in lemon juice, egg and a dash of salt.
  3. Place half of the fillets in a buttered baking dish; season with salt and pepper.
  4. Top with rice mixture, then remaining fillets.
  5. Brush with remaining butter. Sprinkle with salt and pepper.
  6. Bake at 375° for about 35 minutes.
