Instructions
- Cook onion in 2 tablespoons butter until slightly tender; stir into rice.
- Mix in lemon juice, egg and a dash of salt.
- Place half of the fillets in a buttered baking dish; season with salt and pepper.
- Top with rice mixture, then remaining fillets.
- Brush with remaining butter. Sprinkle with salt and pepper.
- Bake at 375° for about 35 minutes.
