Ingredients

  • 2 cups sifted Softasilk
  • 1 1/3 cups sugar
  • 3 teaspoons double-action baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/3 cup high grade shortening
  • 1 cup milk, divided
  • 1/2 teaspoon lemon extract
  • 1/3 cup unbeaten egg yolks (4 medium)

Instructions

  1. Sift together into a bowl the Softasilk, sugar, baking powder, and salt.
  2. Add shortening, 2/3 cup of milk, lemon extract, and vanilla to the dry ingredients.
  3. Beat vigorously with a spoon for 2 minutes or mix with an electric mixer on medium speed for 2 minutes.
  4. Add the remaining 1/3 cup of milk and the unbeaten egg yolks to the mixture.
  5. Beat for an additional 2 minutes.
  6. Pour the batter into two prepared round pans, each 8 inches in diameter and 1 1/2 inches deep.
  7. Bake in a moderate oven at 350°F for 30 to 35 minutes.
  8. Allow the cakes to cool before frosting with White Mountain Icing.
